2022 THE PRISONER WINEMAKER SERIES SPARKLING RED

The approach we took making this wine was to marry what we know about sparkling base with the style of Sparkling Shiraz from Australia. All of the fruit for this blend comes from our estate vineyard in Oakville. The grapes were harvested at a time to retain optimal acid and alcohol levels to best promote fermentation in bottle when we go to tirage. The end result allowed for a more bright red fruit profile, with notes of rasberry coolis and fresh strawberries. The fruit was hand harvested and gently destemmed for fermentation on the skins to extract color and tannins. Fermentation was quick, and maceration only lasted 7 days to ensure we didn't over extract. Then the wine was pressed and transferred to neutral French barrels to age for six months before going en tirage. The wine rested in bottle to build the sparkle for 6 months before finishing, for a total of 12 months to release from harvest.
